My Daughter has a cooking lesson at school tomorrow and they are making chicken wraps. She wants to make a non meat one but she has to actually "chop" and "cook" something (otherwise it would just be a cold sandwhich!) and so we experimented with a few inventions over the weekend. This one was the winner. I have told her to make a great show of slicing the mushrooms and lettuce while everyone is chopping chicken.
Vegetarian Tortilla Wraps
For each wrap:
Small amount of olive oil for sauté
1 ready made Tortilla
Few strips of red pepper
3 – 4 button mushrooms, sliced
Dash soy sauce
1 spring onion, trimmed and sliced lengthways
Small handful iceberg lettuce, shredded
Grated cheese, about 2 tablespoons
Few slices or matchsticks of cucumber
Heat the olive oil and sauté the red pepper for a few minutes until it softens. Add the mushrooms and stir well. When they soften add a dash of soy sauce for flavour and to keep it moist. Do not cook to a mush; you still want a little crunch in the peppers.
Heat the tortilla as instructed on the packet, usually about 8 seconds in the microwave.
Spread the pepper and mushroom mix in a line towards one edge of the tortilla and sprinkle the rest of the ingredients over. Roll up into a wrap and enjoy.
